I had to make cookies yesterday. I had to, okay? Sure, I'm relieved to be away from a stressful job, but job hunting all day for the last two days really had me stressin'.
But then I made cookies, and I was fine.
I saw a pin on Pinterest that led me here, to The Burlap Bag - 2 Ingredient Cookies.
All you actually need is a few ripe bananas (the riper the better, since the darker a banana gets, the sweeter it is - means you don't have to add sugar!) and a handful of oats. Lauren at The Burlap Bag used 2 large bananas & a cup of oats, but you may have to adjust depending on the size of your bananas.
Here is what I did:
Mash your ripe bananas until there are no large chunks.
Add quick-cooking oats a little at a time until the mixture just holds together. It shouldn't feel too wet or too dry. If it's too wet, add another little handful of oats; if it's too dry, add a teeny splash of milk (less than a teaspoon) until the consistency seems right.
You can add a handful of any mix-in you like: dried cranberries, trail mix, chocolate chips, whatever sounds good to you. I had some sweetened coconut on hand, so I mixed that in. (Also, a peench of cinnamon and a teaspoon of my homemade vanilla extract.)
This will make about 16 cookies, depending on the size of your bananas. Roll the dough into balls the size of walnuts. This would be great to have the kids help with (and they can eat all the raw "dough" they want since there is no egg in the mix).
Place cookies on a GREASED cookie sheet or a piece of parchment and flatten slightly. Bake @ 350F for 15 minutes or so, or when cookies are firm to the touch and slightly browned around the edges.
These cookies are soft and chewy. If you want a harder cookie, leave them in the oven a bit longer until they reach the consistency you want.
We ate them all and I don't even feel bad.

They might even be a good granola-bar replacement. You could make them with raisins, or other dried fruits, peanut butter chips, coconut, the possibilities are many. This pin is a win!
